WHAT’S THE DIFFERENCE BETWEEN GELATO & ICE CREAM?
We here at Lola’s Gelato get asked this often.
The biggest difference is the ingredients used and the method in which each product is made.
Ice Cream and Gelato both use milk, cream and sugar. However, Ice Cream has eggs and/or yolks, Gelato does not.
Gelato uses a higher content of butterfats than Ice Cream. More fat = more flavor.
Gelato is churned at a much slower rate than Ice Cream, resulting in a dense, smooth texture and consistency.
Ice Cream is churned at a fast pace to incorporate more air, making it lighter than Gelato.
Due to the denser texture of Gelato, flavors mixed in will be more pronounced than Ice Cream.
